Diego grew up in Oaxaca, where his family simmered moles for days over a wood fire. In his Kampong Glam home he presses tortillas by hand on a comal and pours moles built from thirty ingredients — the real, layered flavours of Mexico you simply cannot find here. Every dinner is a personal, soulful spread served family-style.
